Next Class: Salt, Oil & Vinegar - The Tasty Trio

Do you ever stand in front of an array of vinegars and oils and think, They all look so tasty -- but what on earth would I do with them? For many of us, our vinegar and oil repertoire begins and ends with salad dressing. And using salt for something other than boosting other flavors is really outside our experience. And yet, these three ingredients can be used to make the simplest dishes sing! If you'd like to know more, join us on Thursday, April 22nd for a class with Ilyse Rathet on Salt, Oil & Vinegar, the Tasty Trio. Ilyse and her husband Ron Post founded Ritrovo Italian Regional Foods and have spent years studying, cooking and sharing their knowledge about the traditional and artisanal foods of Italy. She's a terrific teacher and in this class will help you understand the essential principles of balancing acidity and fat, composing flavors, and using finishing salts to bring flavors together in deliciously thrilling ways.
