February 20th Class: Artisan Salts

If you've been in the shop lately and bellied up the salt bar, you may have noticed that there's a lot of cool salt in the world. Not just plain old white and granular, but pink, red, black, flaky, crystalline, and chunky! And then there are salts that have been smoked or infused with other flavors. And how is one to use all these wonderful little bits of NaCl (sodium chloride)? When is a flake better than a crystal? What can you do with a salt that looks like tiny little pieces of black tissue paper? To find out, join us on Friday, February 20th for a class with Monica Guest from Saltworks . She'll lead us through a tasting of naturally occuring variations of salt, plus several more that have been flavored. You'll learn about where they come from, what causes the differences, and (best of all) how to use them at home to make your food sparkle. Very cool.
