Next Class: Michael Recchiuti Makes Truffles

Chocolate is a glorious thing – the snap of a good dark chocolate bar, the crescendo of flavor, the creamy goodness that rolls over your tongue – its easy to see why its Latin name is Theobromo (food of the gods). But as delicious as naked, unadorned chocolate can be, the decadent lure of chocolate combined with butter and cream and other fine things can be almost overwhelming. Michael Recchiuti is one of the country's leading confectioners; he has an obsession with chocolate and has raised the truffle to a state of bliss. Join us on Saturday evening, October 11th for a class with Michael, in which he will explore how he creates his Kona Coffee truffle. He will explain his exploratory process starting with the coffee, chocolate and other ingredients, and then through a series of steps, tastings and tests, he’ll go from bean to a finished truffle. The holidays are coming – think how impressed your friends will be when you present them with crazy good bonbons you’ve learned to make! (And how happy you’ll be eating the ones that aren’t absolutely perfect!)
