Next Class: All American Cheese 101
October 21, 2008
Are you flummoxed by the sheer number of different cheeses available? Overwhelmed by your choices? Or just curious about how milk, salt and a little culture can be transformed into so many wonderfully different cheeses? Perhaps we can help. On Thursday, October 30th, join us for an All American Cheese 101 class and learn about the basic categories of cheese and their flavor profiles. We’ll be discussing the seven primary styles of cheese and how their make-procedure determines their flavor and texture, and tasting terrific American Farmstead examples of each. You’ll learn to recognize a stinky cheese when you see it, how the blue gets in the cheese, what makes a gouda so good, and more. Plus you’ll be tasting the work of world class cheesemakers and sipping tasty wine – what could be nicer on a blustery October evening?
